Fat Deborah’s is what I call my version of a homemade oatmeal cream pie. These cookies are easy to make and don’t take up too much of your time!

First, gather these ingredients for the cookie:

1 1/4 cup softened butter

1 cup brown sugar

1 1/2 cup flour

3 cups instant oats

1 egg

2 teaspoons vanilla

1 teaspoon baking soda

1/2 teaspoon salt

1/4 teaspoon cinnamon

Ingredients for the cream filling:

1/2 cup soft butter

2 cups powdered sugar

2 tablespoons whipping cream

1/2 block of cream cheese (optional)

Directions:

Now you are ready to start baking homemade oatmeal cream pie cookies! First, preheat the oven to 375 F. Then, beat the butter and sugars together until creamy. Next, combine flour, baking soda, salt, and cinnamon in a bowl and stir. Next, add oats and mix well. After that, combine the dry ingredients with the wet mixture. Start to form the cookie and place it on a baking sheet. Cook for 10 minutes. For the cream filling, combine all ingredients.
